You must use your own good judgment on these. I usually don’t measure anything! Have FUN! Experiment and adjust to suit what you have and what you like.
Red Cabbage Slaw
Ingredients:
- 1 head of red cabbage, organic – sliced thinly
- 1 red onion, thinly sliced
- 1 bunch of organic cilantro
- 1 bunch of parsley
- Extra Virgin Olive Oil -
- Vinegar - Apple Cider or Rice
- Sea salt
- Red pepper flakes – optional
- Toss together and leave in fridge
Nettle Detox Pesto
Ingredients – roughly equal amounts of fresh stinging nettle leaf, cilantro and parsley. I use a food processor for this. Pulse the leaves of all three greens. Then add the remaining ingredients to get a coarse paste, adding more oil if needed. Taste and adjust. It keeps in the fridge and freezes very well.
- Nettles - big bunch (8 sprigs x 1-2’)
- Cilantro bunch
- Parsley bunch
- Garlic – 3-5 cloves
- Brazil nuts – about a cup
- Pumpkin seeds – about 1/2 cup
- Pinch of sea salt
- Spirulina powder – 1-2 T
- Flax oil – about ¼ cup
- EVOO – about ½ cup
- Lemon juice – 1 to 2 lemons
- Optional ingredients: black walnut oil, soaked chia and/or flax seeds, black seeds – nigella sativa, hemp hearts
Avocado & Pumpkin Seed – Side Salad or Dessert
- Avocado, pumpkin seeds organic & raw, sesame oil, coconut aminos, sea salt or everything spice blend.
- Roast about a ½ cup of pumpkin seeds in a cast iron skillet on the stove or in the oven. They are best when lightly browned.
- Mix equal amounts of sesame oil and Coconut amino acids as a dressing.
- Cube a ripe avocado. Toss lightly with the pumpkin seeds. Top with sesame oil dressing. I love to add coarse salt or Everything Spice blend.
